How to Tell if Ground Beef Is Bad Reddit
What does spoiled beef smell like? I have 3 lbs of beef chuck stew meat that I bought on the 27th and kept tightly wrapped in an extra-cold fridge till today the 30th - which is the sell-by date. The meat has a tangy/tart smell. Not unpleasant. Is this the smell of raw beef or spoilage?
It doesn't smell bad. Just kinda ... like lime or grapefruit or something bracing like that. Like it's tangy. Or like sea air.
Really would appreciate this kind community's feedback :/ Not sure if this is gone-bad smell. Or tightly-wrapped beef chunks that were soaking in their juices for 3 days smell.
But is 3 days all it takes to go fully bad? And that too when today is the sell-by date?

If it's spoiled, you know it. It's chuck, so you're gonna cook the hell out of it anyway. You'll be fine.

Rancid beef will make your stomach turn. It sounds like it was starting to turn and needs to be cooked now or thrown away.

Beef tends to have a bloody/salty, coppery, tangy smell on a good day. Meat on 'the edge' tends to have a … texture that verges on a sickly slimey/tacky feel. If the meat has a rainbow sheen or slight green hint to the color, you might reconsider.
I buy a lot of "Manager's Special" beef. Some of the best steaks I've had have been bought on sell by dates and cooked or frozen the next day. If the texture is not lizard-brain repulsive and the smell is not unnatural, cook by tomorrow or freeze.

The sheen is no indication of meat expiring.
There is a nice video on youtube about the rainbow sheen from food unwrapped iirc. Gut wrenching stench from bacteria (fecal/ammonia) or visible oxidation might be signs

Wow what is "manager's special" beef?
The meat is not slimy-looking at all. The chunks that were on the inside of the package have a grayish color. The rest are all bright red.
It's not lizard-brain repulsive smell at all. In fact honestly it smells nice. What made me worry was that it smells tangy and tart. Which is not a smell I ever associated with beef before.

IME, if the meat smells tangy but doesn't make your lizard brain "danger" meter go off, it's fixing to turn but if you cook it thoroughly and eat it quickly you'll be fine. YMMV.

The Tangy smell is lactic acid which is produced by lactobacillus. Lactobacillus is not a pathogen but it does produce lactic acid which will change the flavor of things.
Spoiled beef smells putrid not Tangy.
Sea Air does not smell Tangy to me. Sea air smells Briny to me because of the salt. Tangie smells like acid not salt.

Indeed! What I meant about the sea air was the bracing feeling you get when you smell it, not the type of smell itself.
And also, is the meat safe to eat then?

my rule of thumb is....if you suspect...toss it out..not worth it

I feel that it smells like wet/dirty dog. If you have a dog, you know what they smell like when they've been outside all day. That. Maybe a little more putrid if you keep going.

Oh my god, yeah luckily the meat does not smell like that.

Meat that is going bad has a slimey feeling on the surface.
You can wash that off using fresh water and it will likely smell pretty good ----but it's time to use it promptly.

Sometimes (not for ground meat) I rinse it quickly in cold water, and dry it with paper towels, then cook any quick way meaning not crockpot as I want to get it hot quickly. This is just to make it more pleasant to work with, not to change meat that has turned bad.
